I have Screenblast Acid 4.0 & Soundforge 1.1 preloaded in my computer.
I've tried using them & I am having a serious learning curve problem. I'm just not getting the hang of it.

Are these good recording tools?

Can anyone suggest an easy to use program that will deliver pro quality results.

Nope, Sonar Studio. I've been using their stuff for a LONG time, and I think in the last release or two they've really solidified their product. Probly some "pros" who still look down on it, and it does have its warts, but it works for me.

I think they have demos you can download, and they have a pretty big product line, so you can find something at whatever price point you're willing to live with. My brother has one of their more entry-level products, and it really is quite similar to Sonar, it just doesn't have quite the depth and doesn't allow the same number of tracks, etc.
